Pistachio cake…need I say more? It feels like my family has been celebrating for weeks…It was my youngest’s birthday, Mother’s Day, my husband’s birthday, Father’s Day and then my oldest’s birthday all within a couple of weeks of each other! Good-ness!! We had to start getting creative with ways we celebrate (like cookie cakes and pies, instead of traditional cake), and I’m sure these celebrations have added a few pounds to my waistline. This pistachio cake recipe might just make it to the top of our list for next year!
Pistachio Cake
Ingredients
- 2 Eggs
- ½ Cup sugar
- 1 ½ Cup flour
- ½ Cup butter
- ½ Cup water
- ⅓ Cup chopped pistachios
- 1 Tsp baking powder
For the Frosting
- ½ Cup butter
- 2 Cups powdered sugar
- 2 Tsp pistachio extract
Optional: For the Topping: ½ Cup chopped pistachios
Directions
- Preheat the oven to 350 degrees.
- Place all the ingredients in a bowl and, with the help of a mixer, mix until everything is incorporated and no lumps are left.
- Pour the batter into a greased cake pan.
- Take to the oven and bake for 40 minutes or until done.
- While the cake still in the oven, make the frosting: add the butter to a bowl and mix with a mixer for 3 minutes or until fluffy. Incorporate the powdered sugar and the pistachio extract and continue mixing until light and airy. Add the food coloring and mix until everything is light green (around 1 minute).
- Remove the cake from the oven and let it cool down for 10 minutes.
- Remove the cake from the cake pan and let it cool for 25 minutes.
- Decorate it with the frosting. Optional: top it with the chopped pistachios.
- Serve and enjoy.
Tip: If you are feeling extra indulgent pair it with some vanilla ice cream. 😉

Utterly flavorless, cement-like texture. Even the frosting needed considerably more to make it taste like anything but butter. I’m an experienced cake maker and this was awful.
