Last year on Christmas Eve I got on my blog in search of a recipe I was sure I had posted a few years back…the funny thing is that I couldn’t find it. It seems I never shared one of my all time favorite breakfast recipes with you?? This recipe for overnight blueberry French toast is amazing and always a treat in our house. It’s also one of our Christmas traditions.
And since I need it on my blog so I can find it easily, I NEED to share it. 😉
Ingredients: loaf of French bread, 4 eggs, 2 cups of milk, 3/4 cup of brown sugar, 1 tsp. vanilla, 1 tsp. of ground cinnamon, small bag of frozen blueberries, 1/4 cup of butter
1. Slice the bread into about 1 inch slices and arrange them in a greased 9X13 pan.
2. In a large bowl, whisk together the eggs, milk, 1/2 cup of brown sugar, vanilla and cinnamon.
3. Pour the mixture evenly over the bread, turn slices as needed.
4. Cover and refrigerate over night.
5. The next morning, heat the butter with the leftover 1/4 cup of brown sugar in a small saucepan over medium heat until bubbly. This happens fairly quickly.
6. Sprinkle the blueberries on top of the bread slices, then drizzle the heated mixture over the entire thing. (Use as much or as little blueberries as you prefer.)
7. Bake in a 375° oven for 30-45 minutes.
8. Optional: Dust with powdered sugar.
9. Serve hot!
