I LOVE avocados!! At least now I do, there was time when I wouldn’t have touched them. And not for any particular reason, they are green and well I had this thing about green stuff. (Luckily my girls did not inherit this hatred for all things green!) Today on the other hand I eat them all the time. My favorite use is with chips (guacamole), on sandwiches, in soups…you get the picture. So why not use them for other purposes?
I was challenged to be creative using avocados and so what better way to use them but a party! 😉
For this party, I used the entire avocado. Yep, every last bit of it. Let me show you…
I used the seed as a place card holder.
Using a sharp knife, cut straight down, from top to bottom, until you hit the seed. Then twist it until it separates into two halves. Carefully strike the pit with your knife. Using a twisting motion, use the knife’s leverage to loosen and dislodge the pit.
It should break away fairly easy. Clean the seed with soap and water to make sure it’s thoroughly clean.
Place your knife back in the cut you made to get the seed out. Then use light pressure and rock the knife back and forth. This will make the slit for the card.
Flip the seed over, then carefully slice off a small portion. Â This will make the seed sit flat against the table. Â I found it easiest to hold it in my hand and to cut it. Â (JUST PLEASE BE CAREFUL! Â I will not be responsible for any injuries! 😉 )
I love the natural color and paired with a simple collard green leaf, it makes such a pretty place setting.
For another personalized touch, I used the skin of the avocado as a small dish for each place setting. I put them on a small plate with a little pico de gallo inside and some “fancy” tortilla chips.
When you eat dips it’s best for each person to have their own dish, right? AND it adds another natural element!
I have few other tips and a recipe to share with you on Wednesday, but today I’m giving away a gift set from Avocados from Mexico.

You must have read my mind. Couple of weeks ago we were having avocados and I thought what a waste it is not to use the skin somehow. We like to eat our avocados right out of the skin with a spoon and salt/pepper. Just pepper for me. So now I have a great use for the skin. You’ve inspired me and I have a use for that skin and the seed. You’re a genius. Your table looks so pretty with all the natural ingredients. Looks pretty tasty also. Happy Spring

First would be a BLT. Add avocado and mozzarella, you have yourself an AH-MAZE-ING sandwich! A close second would be to mash an avocado in a bowl, add a little bit of honey and you have yourself a great, cheap and chemical free face mask!
