I made this banana bread recipe the other day and it’s so good, you would never know it’s made with something other than traditional flour!! Have you heard of Einkorn? I have been researching wheat for about a year and I decided that I wanted to find a substitute. My family is not gluten intolerant, I just wanted a better option…and I think I’ve found one. This recipe is so easy to whip up, too!
Banana Bread
Ingredients: 2 very ripe bananas, 1/3 cup of melted butter, 3/4-1 cup of cane sugar, 1 egg (beaten), 1 teaspoon of vanilla, 1 teaspoon of baking soda, large pinch of salt, 1 1/2 cups of Einkorn flour (or your choice), optional walnuts or pecans
Preheat your oven to 350°F and grease a 4×8-inch loaf pan, I like to use grape seed oil spray.
In a large mixing bowl, mash the bananas with a fork until they are smooth, then stir in the melted butter.
Add the baking soda, salt, sugar, beaten egg, and vanilla extract, then the flour. Stir the ingredients until they are all combined well, but don’t over mix. If you like nuts, add about a handful or whatever your preference is…it doesn’t have to be an exact science. 😉
Pour the batter into the loaf pan and bake for about 50 minutes or until a tester inserted into the center comes out clean.

You might be wondering why I am switching out my flour…There are a few reasons, I decided to start using Einkorn but the main reason is because of it’s compatibility with the human body when compared to the modern hybrid wheat of today. Einkorn grain is easier to digest, so nutrients are better absorbed. I’ll still eat bread from the store occasionally and when we go out to eat, but if I can use it at home I will! Here’s a chart on the back of the box from Young Living, in case you are curious about the gluten:

I just found your banana bread with einkorn flour recipe. Do you use all-purpose einkorn or the whole wheat einkorn flour? Im new to using einkorn and understand it can be a bit tricky at times. Eager to make this banana bread! thanks for your help!

I’m not entirely sure, but my guess is all-purpose. I get mine through Young Living and it doesn’t say on the box.

Another reason to use einkorn flour is that it is not sprayed with Roundup. Some wheat growers use a “finishing” spraying of Roundup to dry the wheat, so you never know which wheat products are contaminated and which are not. That is NOT something I want in my food, so I am learning to use einkorn.

I made this for my wife. It only took about 15 min to but together. And 55 min to bake. She said it was the best Banana Nut Bread I have ever made for her. Great flavor and texture. This will now be my go to recipe for Banana Nut Bread.
