A few weeks ago, when we were in Texas, I wanted to make a baked potato soup recipe that I had at home. The problem was that I could not find it anywhere on the Internet. It is really easy and can be made in 30 minutes, so I thought I would share it with all of you. (Also, so it will be on hand if I ever need it again!)
BEST Baked Potato Soup
Ingredients
- 2-3 large potatoes
- small onion, chopped
- 2 Tbs. butter
- 3 Tbs. flour
- 2 tsp. dill or 1/2 tsp. dried dill
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 4 cups milk
- 1 1/4 cup shredded cheese
- optional bacon and chives
To get this made in 30 minutes, start by cooking the onions in hot butter until tender in a dutch oven or medium size pot. Stir in flour, dill, salt, and pepper. Add milk all at once. Let this cook for 12 to 15 minutes or until thick and bubbly. Be sure you stir continuously.
Once you get all the above ingredients started and while they cook, bake your potatoes int the microwave. I wash, puncture each potato with a fork, then place them on a microwave safe place. Cover the plate and cook for 5 minutes at a time, rotating them until they are soft. This normally takes around 15 minutes. If you would prefer to bake the potatoes in the oven, you can bake them for 40-60 min @425. Let them cool then scoop out the pulp.
Add the pulp and 1 cup cheese of cheese to the mixture on the stove top.
Top with remaining cheese, bacon, and chives (or green onions)

Thanks for sharing this! I’ve been wanting a good (easy) recipe for potato soup. I’m definitely going to make this in the future. We had a very uneventful weekend, too. It was amazing how much I got accomplished just staying at home. Hope you have a great week!

Wednesday I made jalapeño popper potato skins. The recipe didn’t utilize the potato pulp and I really didn’t want to just throw it away so I stuck it in the fridge. Yesterday I came across this recipe for baked potato soup and it was the perfect opportunity to use up those potatoes! I had about twice as many potatoes as what your recipe calls for and it was pretty thick so I added a cup or so of chicken stock and I had a little cheddar and a little mozzarella so I threw em both in. It was delicious! Quick, easy and all the ingredients were already in my kitchen.
